1.猪排骨500g,在清水中浸泡两小时,泡出血水

2.排骨冷水下锅焯水五分钟,加入料酒、姜去腥

3.焯水之后的排骨捞出,洗净

4.砂锅加入适量清水,放入焯水后的排骨,加入葱姜,烧开后转小火

5.冬瓜去皮切小块备用

6.排骨炖两个小时之后加入冬瓜块,同时加入适量盐,盖盖小火20分钟

7.20分钟后冬瓜排骨汤就做好了,盛出撒入一点香菜和小葱提鲜

注意:1.炖排骨要冷水下锅,这样汤会比较白且肉质较嫩;
2.为保证汤的鲜美,只加葱姜就好,不用加太多大料;
3.排骨快出锅时再加盐,过早加盐会让肉质变老;
