牛肉干制做步骤:
全部食材:两斤牛后腿肉,油30克,料酒1汤勺生抽2汤勺,辣椒面5克,花椒面5克,熟白芝麻10克。干花椒5克,干辣椒20克,生姜片3片,八角5颗,(所有调料可以随自己喜好增减)。
肉洗净后顺丝切,加生抽、料酒、八角花椒、辣椒、姜片、放锅里拌匀,盖锅盖用中火煮。注意:不用加水
烧开后再翻炒一下,继续盖锅盖小火煮二十分钟以后出锅
用厨房纸粘干牛肉的水份,或者用漏勺多沥一会儿,沥干水份
把锅洗干净,用中火预热锅至不粘时下牛肉,改小火烤干后出锅
洗锅后,开中火,烧干水份加少量油,热油后放花椒和辣椒粉,稍微搅拌后关火下牛肉干拌匀,撒白芝麻拌匀即可
