Ferment flour with bread machine. It takes one and a half hours to ferment the flour. The bread machine is automatic, completing the whole process by itself, like a robot. Just pour flour, yeast, sugar, oil, water into the machine according to the quantity marked in the instruction. Set the machine to Ferment Dough Function, and the machine would begin to work by itself.
While the machine is stirring the flour, mince pork with a cleaver. Mince ginger, scallion, and garlic. Put the ingredients to the chopped meat. Add soy sauce, vinegar to the meat. Add some Haitian soybean sauce from a bottle. The soubean sauce would make the meat taste delicious.
Fry the meat with simmering fire, or just steam it raw. Add some sesame oil to the meat.
The dough is fetmented. Fetch the dough from the machine. Rub the dough with the hannd, with much force. Expel the air within the dough. Use strength while rubbing the dough, so that the roll will be delicious.
Make a big flat pancake with the flour and spread meat fillings onto the pancake. Roll the flour up. Cut the long roll into several sections.
Leave the small meat rolls on the kitchen table for 20 minutes. The meat rolls would ferment for a second time. This step cannot be omitted because the flour would not expand if the time for fermentation is limited. While eating, one would feel the flour is heavy and not porous enough. But do not ferment the dough for a long time, or the bun would turn sour.
Steam the meat rolls with cold water, with medium or greater fire, for 20 minutes. When cold air is boiling, it would ferment the dough for the last time. Steam rapidly.
Enjoy pork rolls with millet porriage and cucumbers. It is delicious.
