火龙果慕斯
材料:
红心火龙果:450克
吉利丁片:3片+1片
淡奶油:200毫升
奥利奥饼干碎:90克
纯牛奶:60克
白糖:60克+15克
蜂蜜:50克(进口蜂蜜40克蜂蜜+10克水)
火龙果汁:30克
做法:
1、饼干碎大颗粒压成小颗粒,均匀的拌上蜂蜜,用剪刀把油纸剪成你的蛋糕模具底大小,铺在模具底,把饼干碎倒入模具中,压实,盖上保鲜膜,放入冰箱中冷藏备用;
2、三片吉利丁片放入碗中清水泡软,沥干备用;
3、称250克火龙果肉,放入料理机榨成无颗粒的果泥;
4、60克白糖和牛奶隔水加热,至白糖全部融化加入三片泡软的吉利丁片,快速的搅拌均匀,至吉利丁片完全融化后关火,不要将盛开溶液的容器从温水中取出;
5、淡奶油打发至纹路清晰先把火龙果泥和融化好的吉利丁奶翻拌均匀,再把淡奶油全部加入翻拌均匀;
6、冰箱取出模具把果糊倒入一半的量,加入200克果肉,再倒入剩下的果糊,用手轻轻摇晃平整,立刻送入冰箱速动,90分钟;
7、另取30克的火龙果汁加入15克白糖搅拌到糖完全融化,泡软的一片吉利丁片加入两勺热水完全融化,倒入火龙果汁完全混合;
8、冰箱取出已经冷冻了90分钟的慕斯,倒入火龙果汁溶液,放入冰箱冷藏4小时;
9、冷藏好的蛋糕,用热毛巾在模具外面捂两遍,下面垫一个高水杯即可脱模。
