刀削面,在丰富多彩的面食中独树一帜,当地日常生活中的家常便饭,也是不可缺少的待客美食。把揉好的面团放在小木板上,拿出削面神器蹭蹭地刮上几下,削出的面又细又长,在锅里不停翻滚,如鱼跃龙门。有顺口溜赞曰:“一叶落锅一叶飘,一叶离面又出刀,银鱼落水翻白浪,柳叶乘风下树梢。”

揪面,把揉好的面团放在面板擀成大面饼,用擀面棍将其卷起,顺着擀面棍长度方向划上几道成长形面条。轻轻拉长揪成一寸左右的面片,在沸水里翻滚两滚,调上小料和大烩菜。热气腾腾的揪面就算大功告成了。面香气扑鼻而来,尽享口福!

莜面荠荠,莜面团擀成薄饼蒸熟,出锅后切成面条 ,可以凉拌冷莜面(粉条、黄瓜丝、蔬菜丁、香菜、蒜末)加调汁调匀,也可以趁热加大烩菜。细细咀嚼,香醇升腾,胃口顿开,回味无穷!

莜面栲栳栳,用开水把莜面和成面坯,边加水边搅拌,待面调成花絮状,停止加水,和成面团。把面团搓成筷子粗细的条状,或揪成猫耳朵大小的片,卷成莜面卷,蒸笼上蒸熟。
