主料:黄牛肉(饭盒部位.背部肉)
辅料:油.盐.姜.蒜.料酒.郫县豆瓣酱.花椒.鸡精.味精.香叶.八角.桂皮.生辣椒面.新鲜绿辣椒.小米辣.泡椒.蚝油.洋芋.魔芋.豆芽.香菜.薄荷
1.牛肉切薄片,用料酒,菜油,盐,腌制10分钟左右
2.菜油8成热,下事先切成片的牛肉,肉变色,起锅备用.油放一边
3.重新热新的油.下姜,蒜,花椒,八角,桂皮,香叶,生辣椒面,郫县豆瓣酱,新鲜绿辣椒,小米辣,泡椒,下事先过过油的牛肉,下鸡精,味精,蚝油,炒3分钟,起锅装盘备用
4.油继续留在锅中加热(已经有辣椒面,佐料的味道)下事先准备好的洋芋,魔芋,豆芽炒至七成熟
5.素菜炒至七成熟,放入适量的盐,倒入砂锅中,将事先起锅装盘的牛肉倒入垫有洋芋,魔芋,豆芽的砂锅内,洒上香菜,将砂锅继续放在小火上,开吃................边吃边放点薄荷
特点:香辣味浓.因本人酷爱小米辣.量上可以自己斟酌
