2019-05-31, Gluten-Free Food

    Good morning readers!

    As I told you I’ve bought a big sandwich for my dinner last night. I actually ate only half of it and saved the other half for this morning. I usually eat a big breakfast in the morning since I usually eat less for my dinner. More importantly, I have been paying attention to my carbohydrate intake.

    Speaking of carb intake, I have to introduce to you what I have learned from the books written by Dr. David Perlmutter, MD, the 《Grain Brain》and《Brain Maker》. Both are loaded with the latest research and development on how to eat healthy and brain health. Know of many people, especially well informed and educated friends and relatives of ours are following the diet plans he recommended.

    Ok, here is the key ingredient that you should try to avoid for the food you eat: Gluten. “Gluten-Free” has become more popular in recent years. There are even gluten-free restaurants and bakeries available recently. If you pay attention to the packaged food on supermarket shelves, you may see things like “Organic”, “Gluten-Free”, or “Non-GMO”. Not too long ago, there was also “No MSG”. If you don’t see stamps or signs like these, then it would be a fair game. You really don’t know what the source of your food was and where it had come from.

    So what is “Gluten”? I guess you can find a more completed definition from many resources. Basically, it’s a kind of protein in wheat flours. A small percentage (5%) of white Caucasians, is severely allergic to gluten. And for the rest of us, it’s also harmful since it is more or less affects our autoimmune system and causes inflammation in our body. The reason is, the structure of this protein is very similar to some kind of virus. This resulted in our autoimmune system’s response and trying to attack it. To make it worse, this kind of reaction will happen in our small intestine, right on the thin films that are responsible for absorbing life sustain nutrients and energy we need every day.

    The problems are not obvious when we are younger. The older we are, the worse the autoimmune reaction will get. There are many diseases were identified that are related to these kinds of reactions. To make it simple, it’s our own immune system that caused damages to our internal organs when we get older.

    You can read the books and find out for yourself since there would be too much information if I try to describe the details here. But for your health and look and feel younger, you can try to limit your wheat intake. There are already many gluten-free foods available in the U.S. But where there are not available, you can always find the alternatives by eating such as vegetables, sweet potatoes, and many others.

    You may also know that sugar should be completely avoided, try to limit your salt intake, and cooking with low heat is the latest trend. But I think I have talked too much today. I better stop before you get bored to death.
