做法:1、备料:千张200g, 黄豆芽100g, 香菜1根,葱1根,姜1块,蒜2瓣,花椒些许,豆瓣酱1勺,生抽1勺,白砂糖1勺,蚝油1勺,鸡精些许,淀粉适量,辣椒粉1勺;

2、将千张切成条状,姜蒜切末,葱切葱花备用;

3、起锅烧水,烧开后,放入豆芽焯水至断生后捞出放如凉开水中晾凉;

4、起锅热油,放入花椒,姜蒜爆香;

5、放入豆瓣酱小火炒出红油;

6、放入适量的清水烧开,放入食盐,生抽,白砂糖,鸡精调味;

7、放入千张,大火煮开后转小火,倒入适量水淀粉,加热至汤汁变得粘稠;

8、将煮熟的千张盛出,盖在豆芽上,撒上葱花香菜,辣椒粉;
9、起锅烧热,倒入适量食用油,将油加热至冒烟,将热油淋在葱花和辣椒末上即可。
