    川菜 3 – Mapo Tofu 麻婆豆腐 (中餐篇3)

    这道菜是豆腐块浸在油而辣的红色酱汁里的

    It consists of tofu cubes set in an oily and spicyred sauce.

    酱汁是基于辣豆瓣酱和豆豉的

    The sauce is based on chili bean paste, andfermented black beans,

    还有碎肉末,通常为牛肉

    along with minced meat, traditionally beef.

    Authentic Mapo Tofu has both "heat"spiciness and numbing spiciness.

    更详细的做法:

    COOKING PROCEDURE:

    It only takes a few simple steps to cook Mapo tofu:blanch tofu cubes in salted water; fry minced meat with aromatic seasonings;braise tofu in the flavoured broth which is thickened at the end.

    只需花几步就可以做好麻婆豆腐:把豆腐块用盐水焯一下;把肉末用香料炒好;然后把豆腐在加料的汤汁里红烧一下,汤汁最后收稠。

    STEP 1: BLANCH

    第一:用盐水焯

    This step is to help firm up the tofu cubes so thatthey don’t break while handling but retain the bouncy, tender texture.

    这一步是为了把豆腐块紧实一下,以免在炒的时候碎掉,让它还保持有弹性的质地。

    After cutting the tofu into cubes (about2.5cm/1inch), gently slide them into a wok/pot filled with cold water. Add 1teaspoon of salt.

    把豆腐切块后,将其慢慢地滑入装了冷水的锅中。加上一勺盐。

    Over high heat, bring the water to a gentle boil.Then turn down the heat to let it simmer for 1 minute. Fish out the tofu andset it aside.

    用大火将水烧开。然后调至小火,焖一分钟。捞出豆腐块。

    STEP 2: FRY

    第二步:炒

    During this step, you’re going to combine all theflavour components of the dish.

    这一步,你要把所有调味料混合。

    Heat up a clean, empty wok until hot then add theoil (if using non-stick cookware, add the oil first then heat). Put in theminced meat and minced ginger. Stir-fry over high heat until the meat loosensand becomes pale.

    加热一口干净的锅,放入油。加入肉末和姜末。大火炒至肉末散开变白。

    Add Sichuan chilli bean paste, fermented blackbeans, chilli powder/flakes and minced garlic. Fry until well combined and thearoma intensifies in the air.

    加入豆瓣酱,豆豉,辣椒粉,蒜末。翻炒使其混合,并散发出香味。

    STEP 3: BRAISE

    第三步:烩

    Pour in Shaoxing rice wine and water. Bring to aboil then gently slide in the drained tofu. Leave to boil for 5 minutes.

    倒入绍兴料酒和水。煮开后慢慢把豆腐滑入。煮5分钟。

    Mix some cornstarch with cold water. Pour in themixture.

    把玉米淀粉和冷水混合。倒入锅中。

    Once the sauce becomes just thick enough, removefrom the heat.

    汁液收稠后,关火。
