一、黄金凉粉
主料:绿豆凉粉1块(500g) 煎炸粉(面粉)80g 鸡蛋1只
辅料:酱油3勺 醋2勺 鸡精1/2勺 香油1勺 香菜少许 葱花少许 蒜末少许 辣椒圈少许 花生碎少许 白糖1/2勺 面包糠100g

二、臊子凉粉
主料:凉粉1块 猪绞肉100g 蒜2瓣 香葱1棵
辅料:盐1/2茶匙(2g) 白砂糖1茶匙(5g) 陈醋2茶匙(10ml) 辣椒油2茶匙(10ml) 永川豆豉2茶匙(10g) 油2茶匙(10ml)
制作工艺:
1.凉粉冲洗一下,切成3cm见方的块。蒜剁成蒜末,豆豉切成细蓉。香葱切成葱花
2.中火加热炒锅中的油至5成热,放入豆豉煸炒出香味,加入猪绞肉翻炒成熟
3.碗中加入陈醋、蒜末、炒好的猪绞肉、盐、红油搅拌均匀制成臊子
4.切好的凉粉摆入碗中,淋上臊子后撒上葱花即可
