——说天地美食,谈家乡风味
前两天做酱香饼,剩下了一小碗秘制的酱香,于是就用来凉拌金针菇,结果却超出了预期,让人很惊艳。

口感非常爽滑,金针菇滑溜溜的,加上秘制酱香,还有香炸花生米碎,竟是无比美味,超级下饭。

【酱香拌金针菇】

一、准备食材:
主食材:
金针菇、上海青、花生米、蒜泥。

秘制酱香:
郫县豆瓣酱、番茄酱、白砂糖、五香粉,这是酱香。
二、操作过程:
1、酱香的形成:
郫县豆瓣酱、番茄酱、白砂糖、五香粉放入一个碗中;

起锅烧油,将混合酱放入煸炒均匀;

酱香就做好了。

2、金针菇、上海青焯水:
金针菇去蒂头;

金针菇和上海青清洗干净;

锅中放入少许盐和油;

金针菇和上海青焯水;

焯水后浸泡于凉水中;

沥干水份,尽量挤干水分,焯水完毕。

3、香炸花生米;

将花生米碾碎;

蒜剁泥。
4、凉拌:
将蒜泥放入焯水后的金针菇里;

放入秘制的酱香,撒上花生米碎;

拌匀即可。
5、装盘:
如果想要造型,可以先装入杯子中;

再倒扣在碟子里,旁边的花朵为上海青的蒂头,好看又好吃;

其实不用造型的,如一碗面条一般,叉入提起,就可以直接开吃了。
