食材表:
高筋面粉270g、酵母3g、纯牛奶105g、淡奶油40g、全蛋液35g、白砂糖50g、食盐1.5g、黄油15g、炼乳15g、表层黄油适量
制作方法:
1、把除了黄油以外所有的食材统统倒入厨师机桶内,酵母避开食盐和白糖放进去,以免影响发酵。

2、开始揉面,面团揉光滑能拉出来的粗膜,然后加入黄油,继续揉面,直到揉出手套膜就可以了

3、把面团密封起来进行第一次发酵,看起来面团发酵至2倍到2.5倍,戳一个小孔不回缩就是发酵好了

4、拍打面团排气,然后再平均分成九等份

5、表层整理光滑一点,再搓成水滴的形状,盖上保鲜膜静置15分钟

6、将面团从中间轻轻地向两端擀开,成一个倒立的三角形状,反过来光滑的一面朝向下面,继续整理,边缘部分也要拍一拍,尽量薄厚一致

7、顶部从中间切开一厘米,然后再由上至下卷起来

8、两边再搓一搓,搓成一对牛角的形状,对弯起来就可以了

9、盖上保鲜膜,再次发酵至两倍大

10、发酵好以后在表层刷上一层全蛋液,送入预热好的烤箱180度烤18分钟

11、烤好以后撒上一层黄油,颜色会更加漂亮
