【人文旅游&饮食文化】中国八大菜系之一 浙江菜系 

Zhejiang Cuisine 

Zhejiang Cuisine include Hangzhou, Ningbo and Shaoxing Cuisine. 

It’s not greasy, and wins its reputation for freshness, tenderness, softness, smoothness of its dishes with mellow fragrance.  

浙江菜系由杭州菜，宁波菜，绍兴菜，组成，不油腻，以其菜肴的鲜，柔，滑，香而闻名。 

Hangzhou Cuisine is the most famous one among the three. 杭州菜是这三者中最出名的一个。 

Hangzhou food tastes fresh and crisp, varying with the change of season.  杭州菜尝起来鲜脆，随季节变化。 

Ningbo food is a bit salty but delicious.  宁波菜有点咸，但是很美味。 

Shaoxing food offers fresh aquatic [ə'kwætɪk](水产的) food and poultry(家禽) that has a special rural flavor. 

绍兴菜提供新鲜的水产和家禽，有着特殊的田园味道。 

The world-well-known Jinhua Ham, Hangzhou Longjing Tea (Dragon Well Green Tea), and Shaoxing  Rice Wine are all necessary in the cuisine.  

世界闻名的浙江金华火腿，杭州龙井绿茶，绍兴米酒都是必备的菜肴成分。 

1 东坡肉 Dongpo's braised（烩,红烧） pork 

2 宋嫂鱼羹 Mrs. Song’s thick fish soup It has an 880-year long history 

3 西湖醋鱼 West Lake sweet-and-sour fish; 

It is said that there was a boy who made his living by fishing. His sister-in-law was very beautiful, so local thugs wanted to marry her and killed his brother. His sister-in-law asked him to escape. Before he left, she braised the fish with vinegar and let him remember this and revenge one day. 

相传有个小男孩以打鱼为生，她的嫂子很漂亮，当地恶棍欲占其嫂，杀害其兄。宋嫂劝他外逃，临行前特意用醋烧制鱼为他饯行，勉励他记住此事将来报仇。 

After he got the honour and rank and came back, he punished the thugs, but he couldn’t find his sister-in-law. But one day he finally found his sister-in-law by the special taste in an banquet. 

后来他得了功名，惩治了恶霸，但找不到她的嫂子。在一个偶然的宴会上吃到特制鱼菜，终于找到了嫂嫂。  

4 叫花鸡 beggar’s chicken 

It is said that 'Beggar's chicken' was invented by a Hangzhou thief. The story 

goes that because the hungry thief had no stove, so he wrapped the stolen chicken in clay and baked it in a hole in the ground, but he didn’t expect it tasted so great. Then beggar’s chicken is famous. 

叫花鸡的做法是一杭州小偷发明的，这个很饿的小偷没有炉子，所以把偷来的鸡外面涂上泥，在地洞里烤。没想到这么美味。
