盐菜扣肉
盐菜扣肉在四川我们也统称烧白,属于川菜系中一特色菜式之一。此菜主料五花肉,配料芽菜。其做法以蒸为主,以素肉同时搭配,肥瘦合适,口味属于咸甜味,同时肥而不腻,适宜秋冬季食用,老少皆宜。
材料:
主料:五花肉600g
辅料:芽菜300g
调料:带根小葱5g、姜片10g、生抽及蒸鱼豉油各10g、红糖15g、 料酒5g、蒜3g、干辣椒3g、花椒5g
过程:
1、洗肉,切小段。

2、盐菜反复洗净,不然会有泥沙!

3、煮肉
锅内放水、小葱(打结)、姜3~4 片、花椒几枚、料酒两勺,冷水下锅,煮15分钟后起锅。

肉下锅咯!强调煮肉水不要倒掉!

4、肉起锅后摸红糖。

5、炸肉。

6、泡肉。

7、油、姜末、花椒少量炒芽菜两分钟。

8、肉切片,放调料。

9、盖芽菜,放调料。

10、蒸大火20分钟,中小火90分钟后出锅。最后用更大盘子盖碗上,倒扣过来,撒少许葱,美食即可享用!
