食材表:
高筋面粉250g、纯牛奶130g、淡奶油50g、炼乳15g、酵母3g、食盐2g、黄油20g、细砂糖15g、蛋黄1个
制作方法:
1、把除了黄油以外所有材料倒入厨师机桶内,大概有五分钟的样子,面团揉光滑

3、加入黄油,刚开始开低速,让面团和黄油充分混合均匀之后再开高速,揉出手套膜就可以了

4、面团发酵。如果是冬天可以借助烤箱或者其他的保温工具发酵,烤箱内放上一碗温水,这样会保持湿度

5、第一次发酵温度控制在30度左右,面团发酵至2倍到2.5倍大

6、取出来轻轻拍打排气

7、平均分成四等份

8、整理光滑以后,盖上保鲜膜静置15分钟

9、撒上一点干粉防粘

10、擀成牛舌状,光滑的一面朝向下面,尽量拍平整

11、折成三折

12、两头向上擀开,中间左右擀开,擀出一个非常平整的长方形,边缘尽量按平整

13、封口处按薄一点方便收口

14、由上至下卷起来,收口处捏紧

15、放入烤箱二次发酵。温度控制在35度左右

16、发酵好以后,表层撒上高筋面粉

17、中间先划上一刀,两边各划两刀
