Egyptian Moussaka
Moussaka is a wonderful baked dish made with lamb or beef. There are different recipes for it from many different countries. It usually has eggplant, spices, and meat, but sometimes people make it without meat. The recipe below is pretty typical in Egypt. Many cooks put a white sauce on top of it, but this version is a little healthier.
Ingredients
2 eggplants
olive oil
3 tablespoons tomato paste
2 tomatoes
1 pound beef
1 tablespoon butter
1 large onion
1/4 cup water
1 tablespoon sugar
salt and pepper
1.Prepare the vegetables; Peel and slice the eggplants, chop the onion, and chop the tomatoes.
2.Fry the eggplant untill is slightly brown.(For a healthier version, you can put a little oil on the eggplant and cook it in the oven)
3.Put the fried eggplant on kitchen towels to take out the oil.
4.Melt the butter and add the onions. Stir until they are slightly brown. Then add the meat. Cook the meat until it is no longer pink.
5.Add the tomato paste, the tomatoes, the sugar, the salt and pepper, and the water.
6.Cook on low heat for 10 minutes until it is a thick sauce.
7.Put 1 layer of eggplant in the bottom of a pan. Add a layer of sauce, then another layer of eggplant and put the rest of the sauce on top.
8.Bake in the oven at 180 degrees for 10 minutes.
Serve the moussaka with white rice or bread.
