家乡的食材,总可以带来各种回忆杀。
江西笋干,同事妈妈新制的菜干,激发了我的创造力,便随意发挥搭配了几个有两张风味的美食,笋干烧山鸭,配上开胃菜干汤。
[笋干烧山鸭]
食材准备:
1.四分之一只山鸭(山鸭肉质紧,不油腻,适合炒制);
2.笋干;
3.姜蒜辣椒。
制作过程:
1.将山鸭的皮肉分开,切成小丁

2.备好姜蒜辣椒等配料

3.开火,将锅烧热,不放油,直接放入肉丁炒至变色后盛出(炒制过程鸭肉中水分蒸发,有去腥效果)

4.刷锅后,热锅放少量油,倒入鸭皮,煸出油

5.加入姜片,蒜末,干辣椒炒,再倒入鸭丁和笋干翻炒
6.加入适量食盐,老抽上色,米酒酿去腥,加水盖锅,水开后转小火焖制

7.焖二十几分钟后收汁出锅

[开胃菜干汤]
食材准备:
菜干,青椒,蒜,腊肉,豆干,鸡蛋,葱花
