Xinjiang Saute Spicy Chicken(新疆大盘鸡)

1】main ingredient(主料):chicken(鸡)

2】Charge mixture

(配料):

potato(土豆)

line pepper(线椒)

bell pepper(彩椒)

stewed noodles(烩面)

3】Flavoring(调味料):✔onion(葱),ginger(姜),garlic(蒜)

✔salt(盐)

sugar(糖)

chicken essence(鸡精)

aginomoto(味精)

✔homemade chili shredded(自制辣椒碎)

The ratio of dried iron pepper to main pepper.(干铁皮椒与干线椒的比例为2:1。)

✔homemade spice powde(自制香料粉)

Chinese red pepper 50g(花椒50g)、galanga 30g(良姜30g)、star anise 30g(八角30g)、myrcia 30g(香叶30g)、Chinese cinnamon 20g(桂皮20g)、cumin 20g(孜然20g)、ginger 10g(沙姜10g)、liquorice 10g(甘草10g)、amomum tsao-ko 10g(草果10g)

4】Cooking process(烹饪流程):

Wash the chicken and chop it into pieces.Cut a potato into pieces.Cut the line pepper and the color pepper into pieces. (把鸡洗净切成块。土豆切成块。线椒和彩椒切成块。)

Marinate chicken for 20 minutes with onion,ginger,cooking wine,salt,aginomoto, chicken essence, homemade spice powde.(把鸡块用葱姜,料酒,盐,味精,鸡精,自制香料粉腌制约20分钟。)

Cook the stewed noodles and place them on a custom-made copper plate.(把烩面煮熟,放在定制的铜盘上。)

Stir fry sugar into tender sugar,then ,add potato,chicken,cooking wine, homemade chili shredded,add the soup and then season it .(把糖炒制嫩糖色,加入土豆块、肌肉、料酒、自制香料粉,加汤然后调味。)

Burn the dishes to taste,then,add line pepper and bell pepper.Take up the juice slightly,at last,pour it on the custom-made copper plate.(烧入味,然后加入线椒和彩椒,稍收汁,最后浇到铜盘上即可。)
