一/刀工操作:
1.将猪肚清洗干净,取厚的部分正反面剞网格花刀后斩成小段

2.将鸡胗(5对)拉去外皮,剞菊花刀

3.将香菜去叶留梗,切段,香葱,青蒜切小段,蒜仔切片
二/烹制过程:
1.锅内加水,分别将剞过花刀的猪肚鸡胗焯水几秒

2.润锅后加适量油,五成油温将猪肚鸡胗(鸡胗放漏勺前先下锅)快速滑油几秒

4.麻油炝锅,开大火放入兑汁
