全麦汉堡

The GrahamBurger

SERVES 4

4人份

材料:

5 garlic cloves

5瓣儿蒜

1 ½ cups olive oil 

一杯半橄榄油

1/4 cup mayonnaise 

1/4杯蛋黄酱

1 pound ground sirloin beef

1磅(大约450克)牛里脊肉沫

4 ounces ground pork

4盎司(大约113克)猪肉沫

Salt and freshly ground black pepper

盐和新鲜黑胡椒

1 red onion, cut into 1/8-inch-thick slices 

1个红洋葱,切成大约3毫米的片儿

1 cup apple cider vinegar

一杯苹果醋

10 ounces Brie cheese, sliced into 4 thin pieces 

280克布尔奶酪,切成4片儿

4 pretzel rolls

4只餐包

1 bunch watercress 

1把豆瓣儿菜(或者其他蔬菜均可)


步骤:

1. Put the garlic cloves and 1 cup of the oil in a small saucepan and simmer over low heat for about 20 minutes, or until the garlic is soft. Lift the garlic from the oil using a slotted spoon and transfer to a blender. Reserve any excess oil for another use. Add the mayonnaise and blend for 2 to 3 minutes, until smooth. Spoon into a small container and refrigerate until needed. The mayo can be refrigerated for up to 5 days.

把蒜和一杯橄榄油放在一只小锅里面,小火炖20分钟,或者直到大蒜变软。用漏勺把大蒜从锅里面捞出来,转移到一个搅拌机中。保留剩下的油做其他用。在搅拌机中再加入蛋黄酱,搅拌2-3分钟,直到完全变细腻。把搅拌机里的东西转移到一个小容器中,放在冰箱,需要的时候再拿出来。储存5天都是可以食用的。

2. Mix the sirloin and pork and season with salt and pepper. Form into 4 patties, each about 1/2 inch thick. Refrigerate until ready to grill.

把牛肉和猪肉混合起来,拌入盐和黑胡椒,做成4个馅儿饼,每一个大约是1.3厘米厚,放进冰箱。

3. Put the onion in a bowl and add the vinegar and remaining 1/2 cup oil. Season with salt and pepper. Let the onions marinate for at least 30 minutes, but longer if possible, 8 to 10 hours or overnight. (The longer, the better!) 

把洋葱放在一个碗里,加入苹果醋和剩下的半杯橄榄油,调入盐和黑胡椒,让洋葱在这里面腌制至少30分钟,如果可以的话,再延长腌制时间,8-10小时,或者过夜,总之是越长越香啦。

4. Prepare a charcoal or gas grill so that the coals or heating elements are medium-hot.

预热木炭或者煤气烤架,这样就会使木炭或者烤架达到中热。

5. Gently put the onion slices on the grill and cook for 3 minutes on each side. Turn them carefully so they don’t slip between the grill grates.

把洋葱放在烤架上,每面烤3分钟,要小心翻动。

6. Put the burgers on the grill alongside the onions and grill for 7 minutes. Turn them over and grill for 7 minutes longer, or until cooked through. Three minutes before the burgers are done, lay one slice of the Brie on each burger to give it time to melt.

把肉沫从冰箱里取出,放在烤架上,烤7分钟,翻过来再烤7分钟或者更长时间,直到熟了。在熟之前的3分钟,在每个肉馅儿饼上放上一块布尔奶酪,让它们融化。

7. Spread the mayonnaise on both sides of the rolls. Top with a cheeseburger and then garnish with the onions and cress. Serve immediately.

把蛋黄酱涂抹在餐包上,放上奶酪肉饼儿,用洋葱和豆瓣儿菜装饰,立即享用~
