小时候每年春天奶奶都会种很多朝天椒,夏天这些朝天椒变红时就会做很多瓶剁椒和酸豆角送给亲朋好友。每年放暑假我都会帮奶奶打下手一起做剁椒。朝天椒的收获周期特别长,可以从初夏一直摘到打霜,这期间每隔几天就有一批朝天椒变红,每次都能采摘一大篮子。
然后做剁椒或酸豆角,自制的剁椒味道醇厚,做菜非常出味。
剁椒炒菜好吃,但切辣椒却是件让人犯怵的事儿,剁完辣椒全身火辣辣。腌好的剁椒做剁椒鱼头或者炒肉,煎鱼等等,味道会上好几个档次特别下饭。南方人早上喜欢吃粥,搭配的咸菜经常就是酸豆角,其实剁椒和酸豆角的做法并不难。
材料:朝天椒,嫩豆角,生姜,蒜,盐,香油
1.朝天椒不要去掉蒂放在水里洗净,然后晾干水分。豆角要嫩一点的,不要去掉蒂整根放在水里洗干净,将表面水分晒干。朝天椒和豆角一定要晒干,不能带水否则容易烂。不去掉蒂是避免水进入辣椒和豆角里。

2.生姜,蒜切末,然后带上手套或袋子,将朝天椒去掉蒂然后切碎,将盐、生姜、蒜、香油放入剁椒里,用筷子搅拌均匀。

3.将豆角去掉两头的蒂,切成1.5厘米的小段儿,然后放适量盐用手揉至变色。倒入生姜,蒜和香油搅拌均匀。

4.将剁椒,酸豆角装入瓶子里,常温阴凉下放半个月自然发酵即可。

注意:
朝天椒和豆角千万不能带水,否则会烂。切朝天椒时一定要用袋子保护好手,要不会超级辣的。瓶子最好用开口比较小的,这样空气不容易进去。发酵时一定要在常温下如果放冰箱温度太低,发酵好后可以放冰箱长期保存。
