听装鲍鱼,泡发香菇,鸡蛋,小菜芯,火腿

二/刀工操作:
1.将泡好的香菇去蒂后切片
2.将鲍鱼改刀切薄片
3.将煮熟的鸡蛋一切四(煮蛋冷水下去烧开不超八分钟为宜),留蛋白部分切薄片

4.将火腿切菱形片
三/烹制过程:
1.锅洗净擦干烧热放油,将葱结姜块煸出香味捞掉
2.将鲍鱼连水倒入锅中,同时加一勺料酒

3.大火烧开后将水倒掉,捞出鲍鱼冷水冲净
4.锅内加鸡汤(教学为清水),将鲍鱼倒入锅内,加香菇,加火腿,加蛋片调味,加料酒,加盐(火腿是咸的,盐要少点),味精,少许胡椒粉

5.小青菜芯未焯水早点放入,开锅后小火勾芡。流芡芡汁稍稀薄

6.勾芡完毕,淋入鸡油(葱油)出锅装盘,用筷子调整小菜芯的造型
