西班牙番茄西瓜冷汤

    Materials(serves six)

    材料(6人份)

    2kg tomatoes (about 20), blanched, peeled and roughly chopped

    2公斤番茄,用热水烫,然后剥皮,切碎

    5 garlic cloves, roughly chopped

    5瓣蒜,切碎

    6 celery stalks, white parts and leaves, finely chopped (450g)

    6条芹菜(大约450克),切碎

    1 small onion, finely chopped (140g)

    1只小洋葱,切碎(这一步要精切哦)

    400g watermelon flesh, deseeded and roughly chopped

    400克西瓜肉,去籽,切碎

    100g crustless white bread, broken into small chunks

    100克无壳白面包,切小块

    150ml passata (or tomato juice)

    150毫升番茄汁

    15g basil leaves

    15克罗勒叶

    2 tbsp red wine vinegar

    2汤匙红酒醋

    200ml olive oil, plus extra for drizzling salt and black pepper coarse sea salt, to serve

    Croutons

    油炸面包丁

    150g crustless white bread, broken into 2–3cm chunks

    150克无壳白面包,切成长2-3厘米的块

    3 tbsp olive oil

    3汤匙橄榄油

    1½ tbsp red wine vinegar

    1汤匙半红酒醋

    做法:

    First make the croutons. Preheat the oven to 200ºC/180ºC Fan/Gas Mark 6. Place the bread in a medium bowl along with the oil, vinegar and ½ teaspoon of salt. Place a griddle pan on a high heat, add the croutons and cook for 2 minutes, turning until all sides are slightly charred and starting to crisp. Transfer from the pan onto a baking tray and place in the oven for about 12 minutes, until golden-brown and crispy. Set aside to cool.

    首先做油炸面包丁。预热烤箱200℃,把面包和橄榄油、红酒醋和半汤匙盐一起装入一只碗中。备好煎锅,开高火,加入这些材料炒2分钟,直到面包稍微烤焦并且开始变脆。把煎锅里的材料放到烤盘中,在烤箱中待12分钟,直到面包变成金棕色,变脆。放一边儿凉快去~

    Place the tomatoes, garlic, celery, onion, watermelon, bread, passata and 10g of the basil in a blender, or large bowl if using a hand blender, along with ¾ teaspoon of salt and a good grind of black pepper. Blend until smooth and then, with the blender still going, add the vinegar and olive oil. Refrigerate until needed.

    把切碎的番茄、大蒜、芹菜、洋葱、西瓜、面包(那100克无壳白面包)、番茄汁和10克的罗勒叶都放入搅拌机中,或者如果你用手动搅拌器的话,就把这些材料就放入一只大碗里面,再加入3/4汤匙的盐和磨好的黑胡椒。开始搅拌,直到这些材料变细腻,然后,在搅拌还在进行的过程中,加入红酒醋和橄榄油,冷藏直到你需要吃它~

    To serve, pour the soup into individual bowls and top with the croutons. Scatter the remaining basil leaves over each portion, along with a final drizzle of oil. Finish with a little coarse salt and serve at once.

    上菜啦,你需要把这个汤倒入独立的碗中,并且把凉下来的油炸面包丁放在汤面上。撒上剩下的罗勒叶,和最后的一些油,放上一点点粗盐,ok,立刻开吃!
