葡式大米饭

Rice is a staple ingredient in our cuisine first brought to the Iberian Peninsula by the Arabs. During the reign of King Dom Dinis, the first written references to the cultivation of rice appeared, but during that time, rice was mainly eaten by the rich. My father was named Dinis after the king, perhaps that’s why he loved rice so much! He taught me how to cook rice for the first time when I was a young school girl. He taught me that the secret to fluffy rice is to cook it using the stir fry method. Coat the rice in the hot olive oil first, and lightly stir fry it before adding the boiling water or broth.

米饭作为主食,第一次来到伊比利亚半岛是由阿拉伯人带来的。在国王Dom Dinis时代,第一个记录下来可供参考的水稻培植方法出现了,但是在这个时代,大米还是有钱人的专利。我的父亲是以国王的名字命名的,或许这也是他如此喜欢大米的原因。他教给了我怎样做米饭,当我还在上学的时候。他教我蓬松的米饭的秘诀就是要炒的。先让米饭裹上热的橄榄油,然后慢慢炒,然后再加入水或者高汤煮。

Serves 6-8

6-8人份

材料:

2 cups uncooked long grain rice

2杯长粒大米

1 small onion (finely chopped)

1只小洋葱,精切

2 tablespoons olive oil

2茶匙橄榄油

1 chicken bouillon cube or (1 cup chicken broth but reduce the water by 1 cup)

1个浓缩鸡汤块儿(或者一杯鸡汤,如果你用一杯鸡汤的话,水就要少一杯哦)

4 cups boiling water

4杯开水

1 teaspoon salt

1茶匙盐

¼ teaspoon paprika or 1 tablespoon tomato sauce (optional)

1/4茶匙辣椒粉或者1汤匙番茄酱(可选)

Preparation

准备:

In a medium heavy casserole pan or deep skillet, saute onions on medium heat in olive oil for about 1 to 2 minutes until light golden colored.

在一只煎锅里面,加橄榄油,用中火炒一下洋葱,大约需要1-2分钟,直到洋葱变成轻微的金黄色。

Add the rice to the onion and olive oil mixture and let the rice stir fry for a few minutes until coated with the oil. Add the boiling water, paprika, bouillon and salt, and stir.

加入大米,翻炒,让大米裹上橄榄油。加入开水、辣椒粉、鸡汤块儿和盐,搅拌。

Let the rice come back to a boil and reduce heat to medium. Stir, cover pan and let it cook for 15 minutes.

煮到沸点,然后减小火力到中火,搅拌一下,盖上盖子,继续煮15分钟。

After 15 minutes uncover the pan, stir the rice, taste, and add more salt if desired.

15分钟过后,打开盖子,搅拌一下米饭,尝一下,看看是否需要加入更多盐。

Turn off heat, cover and remove pan from burner until ready to serve.

关火,盖上盖子,把锅移开。上菜~

Note:

注意:

I like firmer rice, cook it longer if you prefer.

我喜欢硬一点的米饭,如果你喜欢软的,就多煮一会儿。

Never add cold water to rice after it has begun to cook because it will seize up and harden.

绝对不要再煮着的米饭里面加入凉水,因为这会中断烹饪,并且会让米饭变硬。
