    Makes 2 medium loaves

    2只面包的量

    材料:

    12 Jumbo brown eggs (room temperature)

    12只大鸡蛋,室温

    10 cups sifted flour

    10杯筛好的面粉

    2 (6 oz.) cubes of fresh yeast

    2块新鲜的酵母(大约180克)

    1 cup warm water

    1杯温水

    1 tablespoon salt

    1汤匙盐

    1 stick butter or margarine (8 tablespoons) 

    1把黄油或者人造黄油(大约是8汤匙)

    ½ cup olive oil

    半杯橄榄油

    4 cups smoked ham (ham shank) cut into 1/2 x 2 inch strips 

    4杯熏火腿,切成大约1*4厘米的块儿

    1 or 2 whole chouriço or linguica sausage

    1-2根香肠

    1 cup chopped (smoked cured bacon) (if desired) 

    1杯切碎的培根(如果你想要的话)


    Preparation

    准备:

    In a small pan, heat water, margarine and olive oil on low heat. When margarine is melted, test with your finger. It should be warm, not hot. Add the yeast and stir to dissolve. Set aside.

    在一只小锅里,小火加热水、黄油和橄榄油。当黄油融化的时候,用手指测试一下,它应该是温热的,并不是烫的。加入酵母,搅拌溶解。放在一旁。

    Beat eggs until foamy and set aside.

    打鸡蛋,直到起泡,放置一边。

    Sift Flour and salt into a very large mixing bowl. Make a well in the center of the flour and add the eggs and yeast mixture. Knead by hand or with dough hook for at least 10 minutes until dough is light and airy. Look for air bubbles in the batter.

    把面粉和盐放在一只很大的碗里,把鸡蛋和刚刚酵母的混合物倒进去,揉面至少10分钟,直到面团变得很轻盈,而且充满了空气。看看面团中的气泡。

    Note:The batter will be thin and very elastic, not thick like bread dough. If you find it too thin add flour 2 tablespoons at a time and mix well.

    Grease your hands with olive oil and shape the dough into a ball. Place the dough in a large bowl that has been greased with olive oil and dusted with flour.

    用橄榄油涂抹一些在手上,把面团塑形成一个球状。把面团放在一个已经用橄榄油擦过的大碗里面,在上面撒上一些面粉。

    Make a cross in center of the dough to “Bless” it. Cover with plastic and let sit until it has doubled in size about 2 hours.

    在面团中间画个十字,然后用塑料纸盖上,让它发酵,大约2小时之后会有两倍的大小。

    This step is optional depending on your salt preference: Slice the chouriço into desired thickness of slices. Place the meats into a pot of boiling water and let them cook for about 2 to 3 minutes to remove salt. Drain the meats, pat them dry and let them cool. Use meats as is if you prefer saltier bread.

    这一步你可以根据自己对盐的喜好来选择,把香肠切成片儿,把香肠片儿放在沸水中,煮2-3分钟,去盐。排干水,拍干,放凉,如果你喜欢咸一点的话,就不用这么做了。

    When dough has risen, lightly grease and flour your hands . Pour it onto lightly olive oil greased and floured surface big enough to hold the dough.

    当面团发好的时候,在手上涂上橄榄油和一些面粉,把面团转移到一个涂抹过橄榄油且撒有面粉的工作面上。

    When dough is ready, divide in half. Stretch each piece into a 12 x 16 inch rectangle like handling pizza dough, being careful not to tear it.

    做好这一步之后,把面团分成两份,把面团大约拉成30*40厘米的长方形,小心点儿不要撕坏了。

    Spread the meats evenly over the dough. Begin gently rolling up the dough into a loaf. If any holes form, close them up by pinching the dough together with your fingers.

    把肉均匀撒在面团上,慢慢卷好面团,卷成一个长形,如果有孔洞出现,就用手去修补一下。

    Place the Folar onto lightly floured sheet pans or into molded bread pans.

    把面团放在撒有面粉的烤盘里,或者是面包模具里面。

    Let dough rest for 10 minutes before baking.

    放置10分钟再烤。

    Preheat oven to 400 degrees F.

    预热烤箱大约200摄氏度。

    Cook for about 45 minutes at 400 and then lower heat to 350 degrees. Cook another 15 minutes and turn off heat. Cook longer if needed. The folar should have a dark golden color. Let cool before slicing 

    烤大约45分钟,然后降温到175摄氏度,再烤15分钟,关火。这时候面包应该有一个金棕色的外皮。在切开之前先放凉。

    Note:Some ovens may take longer to cook. Check for doneness, by tapping folar with your knuckles. You should hear a hollow sound. For smaller loaves, cook for 30 to 45 minutes.

    注意:一些烤箱可能需要更长时间,你需要检查一下面包熟了没有,用你的指关节敲打一下面包,你应该会听到一个中空的声音。对于更小的面包,烤30-45分钟就可以了。
