Yanbin and I are trying to eat less carbonhydrates, especially at dinner, so that we can stay healthy and um, lose some weight.
I can't live without meat, so one of my best choices is chicken breast -- high protein, low fat. However, chicken breast can get incredibly dull and dry (especially if you roast it a bit too long). For a person like me who loves flavorful food, I found it hard to stay interested when I had to take a sip of water every time I took a bite of my roasted chicken breast.
Apparently, Yanbin didn't like that either and was inspired to make something creative and more edible. He cut a piece of chicken breast in half, stuffed a few thick sliced tofu and bell pepper inside. He massaged salt, black pepper and some oil on the outside. Then, he threw them into the oven, 375°F for 50 mins.
I wondered as he did it: Whoa, what's this thingy? How can tofu goes together with chicken breast?!
The thing is, don't throw away an idea until you give it a try -- it turned out great! The chicken might be a little dry, but it was greatly compensated with the soup from the watery tofu. I loved it.
Chef Yanbin must have been really satisfied with this dish, and I guess that was why he brought home three boxes of tofu today... Way to go chicken breast!
