香草冰激凌

材料:

2 cups heavy cream

2杯多脂奶油

2 cups half-and-half

2杯稀奶油

2 vanilla beans, split lengthwise, or 1 teaspoon pure vanilla extract 

2个香草豆荚,纵切,或者1茶匙纯香草精

9 large egg yolks

9只大蛋黄

1 cup sugar

1杯糖

1 tablespoon salt

1汤匙盐

步骤:

1. In a large saucepan, mix the cream and half-and-half. Scrape the vanilla seeds into the pan and then drop the vanilla pods into the pan. Bring to a gentle boil over medium heat and immediately remove from the heat. Set aside for 30 minutes to give the vanilla time to infuse the cream.

1、在一只炖锅里面,把多脂奶油和稀奶油混合,把香草籽放在锅里,然后把香草豆荚也放锅里。中火慢慢煮沸,然后快速移开火,放在一边半小时,让香草充分浸润到奶油里面。

2. In a medium bowl, whisk the egg yolks until they lighten in color. Gradually add the sugar and salt, whisking continuously to combine.

2、在一只中碗里,打鸡蛋黄,直到它们颜色变浅。慢慢加入糖和盐,搅打使之混合好。

3. Return the saucepan with the cream to medium heat and bring to a simmer. Meanwhile, fill a metal bowl with ice cubes and cold water and set it near the stove.

3、中火再次加热刚刚的奶油锅,小火慢炖,同时,在一只金属碗里加入冰块和冷水,把它放在炉子旁边。

4. Pour about one-third of the hot cream into the yolks, whisking continuously to keep the eggs from scrambling and the custard smooth. Pour the cream and yolks into the saucepan with the remaining cream and set over low heat. Cook for 3 to 5 minutes, until the custard thickens slightly and coats the back of a wooden spoon. When you draw a finger across the custard on the spoon, it should leave a line.

4、把大约1/3的热奶油倒入蛋黄里面,连续搅打,让其均匀。把奶油和蛋黄再倒入炖锅里,和其他剩下的奶油一起低火加热,炖3-5分钟,直到其轻微变稠,可以挂壁。当你用手指在沾了液体的勺子上面划线的时候,应该能够留下一条线。

5. Strain the custard through a fine-mesh sieve into a metal bowl to remove the vanilla beans and seeds. Put the bowl in the ice bath and let the custard cool until chilled.

5、用细网筛过滤蛋奶混合物到一只金属碗里,把香草豆和豆荚拿走,然后把这个金属碗放在刚刚的冰水中,直到蛋奶混合物变冷。

6. Transfer the custard to an ice-cream maker and churn following the manufacturer’s instructions. Serve at once or transfer the churned ice cream to freezer-safe containers and freeze for at least 3 hours, or until hard.

把蛋奶混合物转移到冰淇淋机中,根据机器的指导搅拌。当下就可以吃,或者把它们转移到冷箱,冷冻至少3小时,冻硬后再吃~
