4】Cooking process(烹饪流程):
✔Scrape off scales of live croaker,dig a net viscera and gills,wash. (将活得黄花鱼宰杀,去掉内脏和鱼鳞,洗净。)
✔Change one word knife, fry it in the pan. (改成一字刀,然后在锅里煎一下。)
✔Cut the belly pork into slices,then stir-fry the pork until fragrance。 (将五花肉切成片,然后煸炒出香味。)
✔Add onion,ginger and garlic, stir-fry fragrance。 (加入葱姜蒜煸炒出香味。)
✔Then add yellow croaker, cooking wine, vinegar, soy sauce, soup-stock, and a sweet sauce made of fermented flour. (然后加入黄花鱼、料酒、醋、酱油、高汤和甜面酱。)
✔At first, turn into medium and small fire for about 20 minutes, then thicken the sauce over high heat, removeto a plate. (将火调整至中小火炖20分钟,然后转成大火收汁,装盘即可。)
